Ingredients:
4 or 5 Bell Peppers,
2 Onions
1 can of rotella chopped tomato with green chilis
Soy Sauce, 1/3 Cup
Seasoning Salt- To Taste
1 Lb Chicken breast Strips
1 bag of pantry Cheddar Cheese Sauce
Refried Beans
Tortilla Chips
Olive Oil- 1/3 Cup
In a cast iron skillet slice your bell peppers into the bottom of the skillet. Cut your onions and place atop the peppers. Add 1/3 cup soy sauce, and 1/3 cup olive oil, cover your vegetables. Sprinkle your seasoning salt over you mixture. Place in oven on 500 degree until peppers and onions are roasted.
In a cooker- place your chicken breast strips in water and boil until done.
Once cooked- remove and tear into pieces, and place atop your roasted vegetables in the cast iron skillet.
Pour 1 bag of cheddar cheese sauce over the chicken and vegetables, add salt, and a can of rotella chopped tomato with chilis- return to oven and broil on high until the liquid begins popping and bubbling in the middle of the skillet. The cheese sauce will become thicker.
Remove from the oven, serve with re fried beans and tortilla chips.
